quick pickles
ingredients
- • english cucumber, sliced pickle thin (desired thickness)
- • bunch dill: 6-8 small sprigs
- • 2 garlic cloves
- • 1 shallot sliced very thin
- • 1 tbsp red pepper flake*
- • ½ tsp turmeric
- • pinch salt
picking liquid
- • 1c white vinegar
- • 1c sugar
- • ½ c water
instructions
- add vinegar, sugar & water to the sauce pan and stir. stir in red pepper flake and turmeric. bring up to a boil, then promptly remove from heat (you don’t want the vinegar to begin to cook.)
- mix cucumber, shallot, dill and garlic together, add to a sealable container like a mason jar or quart container. slowly pour liquid into the jar until completely covering the cucumber and let cool. seal and keep in the fridge. enjoy in as soon as an hour.
- *red pepper flakes will make them hot. omit or adjust to preferred level.
